lemon zucchini bread
¾ cup whole-grain pastry flour
¾ cup granular sugar
½ cup soy flour
¼ cup whole-wheat flour
2 tsp baking power
½ tsp baking soda
½ tsp salt
1 zucchini, coarsely grated, 1 ½ cups
1 tsp freshly grated lemon rind
1/3 cup canola oil
2 eggs
1. heat oven to 350degreesF.
grease an 8x4-inch loaf pan. in a bowl whisk together pastry flour, sugar, soy
flour, whole-wheat flour, baking powder, baking soda, et salt to combine. stir
in zucchini et rind.
2. in small bowl whisk oil et eggs. w/a rubber spatula, combine egg et
flour mixtures until flour is completely absorded. lemon zuccihini bread
Blueberry silver dollar pancakes
1/3 cup soy flour
1/3 cup whole-grain pastry flour
1/3 cup whole-wheat flour
1/4 cup cornmeal
1tbsp granular sugar
1
½ tsp baking powder
¼ tsp salt
1 large egg
½ cup heavy cream mixed w 2/3 cup of water
2 tbsp sour cream
2 tbsp unsalted butter, melted
1 cup blueberries
1. heat griddle over moderate heat. In a
large bowl whisk together soy flour, pastry flour,
whole-wheat flour, cornmeal, sugar,
baking powder, et salt.
2. in a bowl, whisk together the egg,
cream mixture, sour cream, et butter. pour wet ingredients
n2 flour mixture. mix just to combine (the batter can be a
little lumpy). stir in blueberries.
3. lightly grease griddle. for each pancake, dollop out a heaping tbsp.
of batter on2 the griddle.
cook about 3 mins, until bubbles
appear on surface. flip pancakes et cook
1 min more.
