lemon zucchini bread

¾ cup whole-grain pastry flour
¾ cup granular sugar
½ cup soy flour
¼ cup whole-wheat flour
2 tsp baking power
½ tsp baking soda
½ tsp salt
1 zucchini, coarsely grated, 1 ½ cups
1 tsp freshly grated lemon rind
1/3 cup canola oil
2 eggs
1. heat oven to 350degreesF. grease an 8x4-inch loaf pan. in a bowl whisk together pastry flour, sugar, soy flour, whole-wheat flour, baking powder, baking soda, et salt to combine. stir in zucchini et rind.

2. in small bowl whisk oil et eggs. w/a rubber spatula, combine egg et flour mixtures until flour is completely absorded.       lemon zuccihini bread
